Roasted Asparagus with Parmesan

Welcome spring with this easy but flavorful side dish.


1 lb. fresh asparagus

2 T. olive oil

1/2 c. grated Parmesan

Salt and pepper

2 lemons

To Prepare

Preheat oven to 400°F. Trim woody ends of asparagus and toss spears with oil. Spread evenly on a baking sheet lined with foil or parchment paper. Sprinkly asparagus with salt, pepper and cheese.

Halve one lemon and squeeze the juice over the coated asparagus. Cut the lemon halves in half again, and place them on the sheet to roast with the vegetables.

Bake for about 8 minutes, or until cheese just begins to brown.

To Serve

Cut the remaining lemon in half to garnish the asparagus on the serving platter. 

Eddie's Recipe Tip:

For a cheesier dish, replace Parmesan with Gruyere or Fontina cheese.
