Preheat oven to 350°. Spray a shallow roasting pan with non-stick cooking spray. In a small bowl, stir together syrup, mustard, vinegar, soy sauce, salt and pepper. Spread mixture over pork roast and place in prepared pan.
Roast uncovered until internal temperature of pork roast reaches 155°. This should take approximately 1-1/2 hours. Remove roast from oven and allow to rest for 10 minutes before carving.
Serve warm with Eddie's roasted yam wedges.
