Chicken Satay with Peanut Dipping Sauce

  • Prep Time: 1 hour
  • Cook Time: 10 minutes
  • Serves: 8

This delicious Thai appetizer can be prepared mild or extra spicy.


Ingredients

1 lb. skinless, boneless chicken breasts
15 wooden skewers
2 t. vegetable oil or cooking spray

Marinade

  • 1 T. light brown sugar
  • 3 T. low-sodium soy sauce
  • 1 t. fresh grated ginger
  • 1 t. grated lime rind
  • ¼ t. crushed red pepper
  • 2 cloves garlic, minced

Sauce

  • 1 T. light brown sugar
  • 2 T. low-sodium soy sauce
  • 1 T. fresh lime juice
  • 2 T. low-fat creamy peanut butter
  • ¼ tsp. cayenne pepper
  • 1 clove garlic, minced
  • 3 T. water

To Prepare

Soak wooden skewers in cold water for at least 30 minutes. Mix all marinade ingredients together in medium bowl. Slice each chicken breast in 6 slices. Pound each slice to 1/8-inch thickness. Add chicken to marinade and allow to marinate for 10 minutes.

Meanwhile, in a small bowl, mix all ingredients for the sauce and set aside.Thread chicken slices onto skewers. Heat grill over medium-high heat. Add oil or cooking spray to grill. Grill 5 minutes for each side until done.

To Serve

Drizzle sauce on skewers or serve on the side. Pair with Pierre Sparr Riesling.



Eddie's Recipe Tip:

Try substituting thinly sliced London Broil for the chicken for a delicious Beef Satay.
