CHEF TOM'S ROTISSERIE CHICKEN WITH SPINACH STUFFING

  • Serves: 4

Five ingredients are all you need for this quick and easy main dish.


Ingredients

1 apple of your choice, peeled, cored and sliced

1 lb. bag of fresh spinach

2 oz. blue cheese, crumbled

2 oz. walnuts, toasted

1 rotisserie chicken

1 T. olive oil

1 t. butter or non-stick cooking spray

To Prepare

Preheat oven to 350°. Heat olive oil in a frying pan over medium high heat. Add sliced apples and sauté until apples are slightly soft. Add spinach and continue to cook until spinach becomes wilted, about 2 minutes. Transfer to a bowl and add crumbled blue cheese and walnuts.

Divide mixture into equal portions and place onto a buttered baking dish. Quarter the chicken into breast-wing and drumstick-thigh portions. Place a chicken quarters on top of each spinach portion and bake for 20 minutes, until hot.

To Serve

Serve each chicken quarter with spinach stuffing underneath.

Eddie's Recipe Tip:

Try stuffing spinach mixture under the skin of raw bone-in chicken breasts, season with salt and pepper, drizzle with olive oil and bake at 350°for 40 minutes until fully cooked.
